Protein packed noodles

Let’s get cooking.

So here is a little recipe that keeps me on track whilst feeling like I’m having a naughty meal!

Ingredients:

  • 100g / Diet noodles or plain noodles
  • 150g / Chicken breast
  • 125g / Chopped tomatoes
  • 50g / Baby spinach
  • Basil, rosemary & black pepper

You’ll need:

  • A grill
  • A frying pan
  • A saucepan

Cooking time: 16-18mins

Let’s get started:

Firstly turn on your grill and wait for it to pre-heat. Whilst you’re waiting to do this, take your chicken and dice it into smaller pieces. By this time the grill should be ready and you can put your diced chicken in to cook.

Secondly, take your frying pan and put it on the hob, add some olive oil and wait 2 minutes (whilst you’re waiting for the pan to heat up, boil the kettle.) before adding the spinach – make sure you keep moving it around. After this, you can then add the noodles to the saucepan and add boiling water to them whilst placing them on another hob.

After about 3 or 4 minutes the spinach will have shrunk nicely and will be ready to take off. Once you have turned off this hob, start preparing your chopped tomatoes.

Once the noodles have been on for 6 minutes they should be ready, pour out any remaining water and add both the spinach and the chopped tomatoes and add back onto the hob. After this, you can add some of the basil, rosemary and black pepper as suits.

By the time you have sorted out all of this the chicken should have been on for nearly 15 minutes and you should then add this into the saucepan too. After another 1 to 3 minutes you’re ready to add your protein-packed noodles into a bowl.
